Mitchell went to the Kennewick high school. During those 4 years she was named first-team all-conference and all-state as a junior and as a senior. She earned Big Nine Conference Player of the Year honors. The important fact is that she led Kennewick High School to the championship of the state in 4 consecutive years. In 2000 they won the title. During her college education, Mitchell played for Idaho (2003–2006) and Utah (2007–2008). In 2008 she started her WNBA career. In that year, she started playing for the New York Liberty. She played in this club until 2013. At the beginning, she was a bench player. Her debut was on 6 June, 2008, when she played instead injured Loree Moore. During her first year in the WNBA, she became very popular, due to her fearlessness in grabbing loose balls reputation. In 2010 she became a player of the first team, after releasing Moore. In the same year, she was a WNBA Most Improved Player. In 2011 she scored 24 points in a match against the Minnesota Lynx.
She decided to skip the season in 2014, because she wanted to spend time with her family in Australia. Since 2015 (February 4) she has been playing for the Phoenix Mercury.
